In India food is “Naivaidy”. It is Sacred. In some communities it is a discipline to cleanse the soul whereas for some it is an indulgence, a celebration.
Evolved with centuries of cultural & foreign influences, Indian food imparts a flavour of history. The long distance Silk & Spice trade routes also left an exploratory and flamboyant mark on Indian cuisine. Over the years Greeks, Chinese, Mughals, Arabs, Mongols, Afghans, Portuguese, Dutch and the French have made intriguing contribution to classic Indian cuisine.
In India recipes were not written, only passed on from generation to generation. Hence, like any great cuisine, they evolved and yet remained true classic dishes. Many natural seasonings, herbs & spices were also employed to lure the senses. The result is centuries of patronage to the art of cooking and a large repertoire of delicious recipes.
